How to make simple roasted beets:

  1. Preheat oven 400°F. Place 3–4 medium beets on a large piece of aluminum foil (work with multiple packets if necessary).

  2. Drizzle with olive oil and season with salt and pepper.

  3. Gather foil up and around beets and crimp to create a tight seal.

  4. Place foil packet(s) on a rimmed baking sheet and roast in oven until beets are tender when pierced with a knife, 45 minutes–1 hour.

  5. Unwrap carefully and let cool.
