Cheer Up, There's More Chorizo !

Is it just me, or does your heart beat just a little bit faster when you see a new chorizo offering on a menu? My mind begins to race when I begin to consider all the dishes that can be enhanced with the simple addition of this smoky sausage. If I am alone in this, I offer you these 6 chorizo recipes in attempt to convey my love of chorizo.

Chorizo & Kale Tostadas

1. Chorizo and Potato Tacos with Cucumber & Pepper Salad

This one is a riff on one of our favorite breakfast tacos, filled with tender potatoes and savory chorizo. With a cooling pepper and cucumber salad alongside, all you need is a stack of napkins and you’re set. Cook, relax and enjoy!

2. Chorizo & Kale Tostadas with Radish and Cilantro

In order to make crispy tostadas we brushed tortillas with oil and baked them in the oven until golden. Meanwhile, a chorizo and kale topping crisps up in the skillet. Make sure the onions are starting to caramelize (soft and golden) and the chorizo is browned before adding the kale. Sour cream spiked with lime zest and juice transforms into a tangy crema. 3. Chorizo and Black Bean Tortas with Queso and Lime Crema

The name torta can mean something different depending on where you are in the world; in Spain it's an omelet and in Italy, a cake. Our torta recipe refers to the Mexican sandwich version. There are dozens of ways you can do up this sandwich, but we love it most with black beans at the center.

4. Pan-Seared Chorizo with Beans, Roasted Peppers & Greens

Spicy, fresh chorizo brings full flavor to this one-pan dish. Searing the Mexican-style sausage builds a base flavor that infuses the pan sauce, coating creamy beans and kale. Everything finishes cooking on the stove, where all the flavors gently meld together. Cook, relax, and enjoy!

5. One-Skillet Chorizo Paella with Orzo and Lemon Aioli

Paella is traditionally made with rice, chorizo, and chicken and cooked outside over an open flame. We've simplified the classic dish by using orzo pasta and fresh chorizo, and cooking it on the stove-top. A bit of spinach stirred in at the end lends a bright, minerally flavor, and the aioli served on top adds creamy richness. Cook relax, and enjoy!

6. Chorizo-Spiced Pork Flatbread with Crunchy Salad and Lime Crema

If you like the big, bold flavors of chorizo sausage then this is a dish for you! We've combined ground pork and chorizo chili spice blend for the topping to these satisfying flatbreads. With chewy naan as the base, sharp white cheddar cheese, and the zing of a lime crema, each bite is a party in your mouth.
