I love celebrating Easter and the arrival of spring with my family and friends each year. I especially enjoy making fresh-flavored desserts like coconut lemon cake (a brush of lemon simple syrup helps to keep the cake moist). My Italian ricotta cheesecake is a quick and easy dessert that is a real crowd-pleaser. Substituting ricotta for cream cheese, itโ€™s a lighter but still satisfying spring treat. -Martha Stewart
