There’s nothing not to love in a creamy cheddar soup—well, other than just how intensely rich it can be! To balance some of that richness we added freshly grated carrots. We also sautéed cremini mushrooms for extra depth of flavor. Don’t worry, there’s still enough cheddar to make the soup feel like a true wintertime treat.
Sweet potatoes and kale are two of our favorite ingredients—not only are they extraordinarily flavorful, but they’re gorgeous in color, and rich in potassium, vitamin A, and vitamin C. We’ve added both to this soup with adorable lumachine pasta and spicy (but not too spicy!) Italian sausage, for a dish that will keep you warm all through the winter! Pork Noodle Soup with Napa Cabbage & Spicy Rayu Sauce | Available on our upcoming menu!
Rayu is a chili oil used in Japanese-style Chinese cooking, and it’s interpreted in this soup to create a spicy and delicious broth. We used one of our favorite condiments in this rayu sauce: a Korean chili paste called gochujang. Rice noodles are softened by sitting in hot water, and ground pork browns perfectly with napa cabbage.
